Principessa is a gelato and Sicilian granita batch freezer which allows you to work the product directly inside the standard carapina.
The movement, which is variable and controllable, reproduces the work of the experienced artisan’s arms, making it more effortless and reducing production times as well as providing the possibility to choose the degree of machine programming to carry out the recipes. Principessa has been designed based on the utmost innovative and sustainable motion technology; it does not require water to function and the energy savings is notably higher than that of traditional systems.
Batch freezing takes place in just one container (carapina), the same in which the ingredients are mixed: the product does not need to be extracted and can be placed on the conservation and distribution counter.
The batch freezing machine has a modular recipe library which can be tapped into giving the master gelato makers the choice of how much they wish to interact during recipe preparation. The machine can also be maintained remotely and is equipped with its own Cloud.
